Method

  1. In a large bowl, mix the flour, sugar, yeast and salt. Add the lukewarm milk, eggs, melted butter and vanilla, and mix to form a soft dough.
  2. Knead for 8-10 minutes until smooth and elastic. Place in an oiled bowl, cover, and let rise for about 1 hour, or until doubled.
  3. Butter a baking dish generously.
  4. Divide the dough into 12 equal pieces. Flatten each into a small disc, place a teaspoon of jam in the centre, and gather the edges up to seal into a ball.
  5. Arrange the filled buns seam-side down in the buttered dish, packing them close together so their sides touch.
  6. Cover and let proof for a further 25-30 minutes until puffy.
  7. Preheat the oven to 180°C (350°F). Brush the tops of the buns with melted butter.
  8. Bake for 25-30 minutes until golden brown on top.
  9. Brush again with any remaining melted butter while still warm, then dust generously with icing sugar before serving.
