  • 4 large eggs, separated
  • 120 g (1/2 cup + 1 tbsp) Granulated sugar, divided

  • 20 g (2 1/2 tbsp) Cocoa powder
  • 1 tsp vanilla extract
  • 250 ml (1 cup) Heavy cream, for filling
  • 200 g (7 oz) Dark chocolate, melted, for ganache icing
  • 150 ml (2/3 cup) Heavy cream, for ganache
  • Powdered sugar, for dusting (to resemble snow)

Method

  1. Preheat oven to 190°C (375°F) and line the Swiss roll tin with parchment.
  2. Whisk egg yolks with half the sugar until pale and thick; fold in flour and cocoa powder.
  3. In a separate clean bowl, whisk egg whites to soft peaks, gradually adding remaining sugar until glossy and stiff.
  4. Fold the egg whites gently into the yolk mixture in three additions, keeping as much air as possible.
  5. Spread the batter evenly in the tin and bake for 10-12 minutes until springy to the touch.
  6. Turn the warm sponge out onto a sugared kitchen towel, peel off the parchment, and roll up with the towel from the short end; cool completely rolled.
  7. Whip the cream to soft peaks; unroll the cooled sponge, spread with cream, and re-roll without the towel.
  8. Make the ganache by pouring warm cream over the melted chocolate and stirring until smooth; cool until spreadable.
  9. Cover the log with ganache, then drag a fork along the length to create a bark-like texture.
  10. Dust with powdered sugar to resemble snow before serving.
