- - 300 g (2 1/2 cups) cornmeal
- - 150 g (1 1/4 cups) plain flour

- - 350 ml (1 1/2 cups) warm milk

Method
- Preheat the oven to 180°C (350°F) and grease a loaf tin.
- In a large bowl, whisk together the cornmeal, flour, sugar, baking powder and salt.
- In a separate bowl, whisk together the warm milk, oil and egg.
- Pour the wet ingredients into the dry ingredients and stir until just combined, taking care not to overmix.
- Pour the batter into the prepared loaf tin and smooth the top.
- Bake for 40-45 minutes, until a skewer inserted into the centre comes out clean and the top is golden brown.
- Cool in the tin for 10 minutes, then turn out onto a wire rack to cool completely before slicing.
