Method

  1. Combine both types of manioc starch in a large heatproof bowl.
  2. Heat the milk, oil, water and salt together in a saucepan until just boiling, then pour immediately over the starch, stirring vigorously until it forms a scalded, slightly lumpy dough.
  3. Let the dough cool for about 10 minutes until just warm to the touch.
  4. Transfer to a stand mixer (or knead by hand) and beat in the eggs one at a time until fully incorporated.
  5. Add the grated cheese and mix until a smooth, elastic, slightly sticky dough forms.
  6. Preheat the oven to 200C (400F) and line a baking sheet with parchment.
  7. With lightly oiled hands, roll the dough into balls about 4 cm (1 1/2 in) in diameter and space them evenly on the baking sheet.
  8. Bake for 20-25 minutes until puffed and golden on the outside.
  9. Serve warm, ideally within 20 minutes of baking, for the best chewy texture.
