  • Lamb shoulder, cut into large pieces — 1.2 kg (2.6 lb)
  • Olive oil — 2 tbsp
  • Onion, chopped — 1
  • Honey — 3 tbsp
  • Wine vinegar — 2 tbsp
  • Water — 500 ml (2 cups)
  • Fresh thyme — 4 sprigs
  • Salt — to taste

Method

  1. Warm the olive oil in a heavy pot and brown the lamb pieces on all sides.
  2. Remove the lamb and soften the onion in the same pot.
  3. Return the lamb to the pot and add the honey, vinegar, water, and thyme.
  4. Bring to a simmer, cover, and cook gently for 1 hour 15 minutes to 1 hour 30 minutes, until the lamb is very tender.
  5. Season with salt and serve with the reduced pan juices spooned over.
