Ingredients

  • - 300 g (2 1/2 cups) plain flour
  • - 1 egg
  • - 120 ml (1/2 cup) water
  • - 1/2 tsp salt
  • - 300 g (10.5 oz) minced beef
  • - 1 small onion, finely grated
  • - 1/2 tsp black pepper
  • - 300 ml (1 1/4 cups) plain yogurt
  • - 2 cloves garlic, crushed
  • - 2 tbsp (30 ml) sunflower oil
  • - 1 tbsp sweet paprika

Method

  1. Make the dough by combining flour, egg, water and salt into a smooth dough; rest for 20 minutes.
  2. Mix minced beef with grated onion, salt and pepper for the filling.
  3. Roll the dough thin and cut into 4 cm (1.5 in) squares.
  4. Place a small amount of filling in the centre of each square and pinch into small dumpling parcels.
  5. Bring a large pot of salted water to the boil and cook dumplings in batches for 8-10 minutes until they

  7. Whisk yogurt with crushed garlic and a pinch of salt.
  8. Warm oil in a small saucepan, stir in paprika briefly, then remove from heat.
  9. Serve dumplings topped with the garlic yogurt and a drizzle of the paprika oil.
