Ingredients

  • Cooked, flaked tuna — 500 g (1 lb 2 oz)
  • Grated coconut — 1 cup (80 g / 3 oz)
  • Onion, finely chopped — 1
  • Green chillies, finely chopped — 2
  • Curry powder — 1 tsp
  • Turmeric — 1/2 tsp
  • Rice flour — 1/2 cup (60 g / 2 oz)
  • Eggs — 3
  • Oil, plus extra for greasing — 2 tbsp
  • Salt — to taste

Method

  1. Preheat the oven to 180°C (350°F) and grease a baking dish.
  2. Combine the flaked tuna, grated coconut, onion, chilli, curry powder and turmeric in a large bowl.
  3. Add the rice flour and mix well.
  4. Beat the eggs with the oil and salt, then fold into the tuna mixture until evenly combined.
  5. Spread the mixture evenly into the prepared baking dish, pressing down firmly.
  6. Bake for 35–40 minutes until golden brown and firm to the touch.
  7. Cool for 10 minutes before slicing into squares for serving.
