Ingredients
- - 1 kg (2.2 lb) Swiss chard, stems removed, roughly chopped
- - 3 medium potatoes, peeled and cut into chunks
- - 3 cloves garlic, thinly sliced
- - 4 tbsp extra virgin olive oil
- - Salt, to taste
Method
- Bring a large pot of salted water to a boil. Add the potatoes and cook for 10 minutes.
- Add the chard to the same pot and continue boiling for a further 8-10 minutes until both potatoes and chard are tender.
- Drain well in a colander, pressing gently to remove excess water.
- Heat olive oil in the empty pot and gently sauté the garlic until fragrant, not browned.
- Return the drained chard and potatoes to the pot, tossing gently to coat in the garlic oil.
- Season with salt and serve warm.
