Ingredients

- - 7 g (2 1/4 tsp) instant yeast

- - 1 clean coin, wrapped tightly in foil
- - 1 egg yolk, for glazing
Method
- Dissolve yeast in warm milk with a pinch of the sugar; let stand 10 minutes until foamy.
- Mix flour, remaining sugar, salt, eggs, melted butter and the yeast mixture into a soft dough.
- Knead for 8-10 minutes until smooth and elastic.
- Cover and let rise for 1-1.5 hours until doubled.
- Punch down, tuck the foil-wrapped coin into the center of the dough, and shape into a round loaf.
- Place in a greased tray, let rise a further 20-30 minutes, then brush with egg yolk.
- Bake at 180°C (350°F) for 30-35 minutes until golden.
