Ingredients

  • Fermented black beans (douchi), rinsed — 60 g (1/3 cup)
  • Garlic cloves, minced — 4
  • Fresh ginger, minced — 10 g (1 tbsp)
  • Shaoxing wine — 30 ml (2 tbsp)
  • Soy sauce — 15 ml (1 tbsp)
  • Sugar — 5 g (1 tsp)
  • Vegetable oil — 30 ml (2 tbsp)
  • Cornstarch slurry — 10 g (1 tbsp) mixed with water
  • Chicken or vegetable stock — 100 ml (1/3 cup + 1 tbsp)

Method

  1. Rinse fermented black beans briefly, then roughly mash with the back of a knife or in a small bowl.
  2. Heat oil in a wok over medium heat; add garlic and ginger, stir-fry until fragrant, about 30 seconds.
  3. Add mashed black beans, stir-fry 1 minute.
  4. Add Shaoxing wine, soy sauce, sugar and stock; bring to a simmer.
  5. Stir in cornstarch slurry, simmer 2-3 minutes until thickened and glossy.
