Ingredients
- Basmati rice, soaked 30 minutes: 400 g (2 cups)
- Chicken, bone-in pieces: 800 g (1.75 lb)
- Yogurt: 200 g (0.8 cup)
- Fried onions (birista): 100 g (1 cup)
- Ginger-garlic paste: 25 g (2 tbsp)
- Biryani masala: 20 g (2 tbsp)
- Saffron strands, soaked in warm milk: 1 pinch (1 pinch)
- Mint and coriander leaves, chopped: 30 g (1.5 cups)
- Ghee: 40 g (3 tbsp)
- Whole spices (bay leaf, cinnamon, cloves, cardamom): 1 set (1 set)
Method
- Marinate chicken in yogurt, half the fried onions, ginger-garlic paste and biryani masala for at least 2 hours.
- Parboil the soaked rice in salted water with whole spices until about 70% cooked, then drain.
- Layer the marinated chicken at the bottom of a heavy pot, top with the parboiled rice.
- Scatter remaining fried onions, mint, coriander and saffron milk over the rice; drizzle with ghee.
- Seal the pot tightly with a lid (using dough around the rim if needed) and cook on very low heat for 35-40 minutes to steam through (dum cooking).
- Rest for 10 minutes before opening, then gently fluff and mix from bottom to top before serving.
