Method

  1. In a large bowl, combine the flour, sugar, yeast, and salt.

  3. Cover the bowl with a clean towel and leave in a warm place to rise for 1 hour, until roughly doubled in size.
  4. Heat the oil in a deep pan to 170°C (340°F).
  5. Using a wet tablespoon, scoop small portions of dough and carefully drop them into the hot oil.
  6. Fry in batches for 3-4 minutes, turning occasionally, until golden brown all over.
  7. Remove with a slotted spoon and drain on a kitchen towel.
  8. Dust with icing sugar while still warm, if desired, and serve.
