Ingredients
- 400 g (3 1/3 cups) brown bread flour or whole wheat flour
- 100 g (3/4 cup) all-purpose flour
- 7 g (2 1/4 tsp) instant dry yeast
- 1 1/2 tsp salt
- 1 tbsp brown sugar
- 2 tbsp sunflower oil
- 320 ml (1 1/3 cups) warm water
Method
- Combine both flours, the yeast, salt and sugar in the large bowl.
- Add the oil and warm water, mixing to form a soft dough.
- Knead for 10 minutes on a lightly floured surface until smooth and elastic.
- Place in an oiled bowl, cover, and leave to rise in a warm place for 45–60 minutes until doubled.
- Punch down, shape into a loaf, and place in the greased loaf tin.
- Cover and leave to rise again for 30–40 minutes until it crests just above the rim of the tin.
- Preheat the oven to 200°C (400°F).
- Bake for 35–40 minutes until deep golden brown and the loaf sounds hollow when tapped on the base.
- Turn out onto a wire rack and cool for at least 20 minutes before slicing.
