Method
- Preheat oven to 175°C (350°F). Grease a loaf pan.
- Whisk flour, baking powder, salt, nutmeg, sugar and shredded coconut together.
- In a separate bowl, whisk eggs, milk, melted butter and vanilla.
- Pour wet ingredients into dry ingredients and stir just until combined; do not overmix.
- Pour batter into the prepared loaf pan and smooth the top.
- Bake 50-60 minutes, until a skewer inserted in the centre comes out clean and the top is golden brown.
- Cool in the pan 10 minutes, then turn out onto a wire rack to cool completely before slicing.
