Method

- Cover and bulk ferment 1.5-2 hours at room temperature, folding the dough once halfway through.
- Divide the dough into 3-4 equal pieces; pre-shape into rough logs and rest 20 minutes.
- Shape each piece into a taut baguette by rolling and elongating; place seam-side down on a floured couche.
- Proof 45-60 minutes until puffy but still springy to the touch.
- Preheat oven to 240°C (465°F) with a baking stone and a tray of water for steam.
- Score each baguette with 4-5 diagonal slashes using a lame.
- Bake for 20-25 minutes with steam for the first 10 minutes, until deep golden and hollow-sounding when tapped.
