Ingredients
- - 400 g (14 oz) macaroni pasta
- - 3 large eggs
- - 300 ml (1 1/4 cups) evaporated milk
- - 250 g (2 cups) sharp cheddar cheese, grated

- - 1 clove garlic, minced
- - 1/2 scotch bonnet pepper, finely minced (seeds removed for less heat)
- - 1 tsp (1 tsp) mustard powder
- - 1/2 tsp (1/2 tsp) paprika
- - Salt and black pepper, to taste
- - 2 tbsp (2 tbsp) butter, for greasing
Method
- Preheat the oven to 180°C (350°F). Grease the baking dish generously with butter.
- Cook the macaroni in salted boiling water until just al dente, about 2 minutes less than package instructions. Drain well.
- In a large bowl, whisk together the eggs and evaporated milk. Stir in three-qua rters of the cheddar, the onion, garlic, scotch bonnet, mustard powder, paprika, salt and pepper.
- Fold the drained macaroni into the egg mixture until fully coated.
- Pour into the prepared baking dish and spread evenly. Sprinkle the remaining cheddar over the top.
- Bake for 35–40 minutes until set firm in the centre and golden brown on top.
- Rest for 10 minutes before slicing into squares to serve.
