Ingredients

  • Cauliflower, cut into florets: 400 g (1 medium head)
  • Potatoes, cubed: 300 g (2 medium)
  • Cumin seeds: 5 g (1 tsp)
  • Turmeric powder: 3 g (0.5 tsp)
  • Red chilli powder: 5 g (1 tsp)
  • Coriander powder: 5 g (1 tsp)
  • Ginger, julienned: 10 g (1 tbsp)
  • Vegetable oil: 30 ml (2 tbsp)
  • Fresh coriander, chopped: 10 g (2 tbsp)

Method

  1. Heat oil in a wide pan, add cumin seeds until fragrant.
  2. Add ginger and potatoes, stir-fry for 5 minutes.
  3. Add cauliflower florets, turmeric, chilli powder, coriander powder and salt.
  4. Stir well, cover and cook on low heat, stirring occasionally, until vegetables are tender but not mushy, about 15-20 minutes.
  5. Uncover and cook a few more minutes to let excess moisture evaporate.
  6. Garnish with fresh coriander before serving.
