Ingredients

  • Eggs — 4
  • Sugar — 200 g (7 oz)
  • Plain flour — 120 g (4 oz)
  • Baking powder — 1 tsp
  • Whipped cream — 480 ml (16 fl oz)
  • Mixed strawberries and blueberries — 300 g (10.5 oz)
  • Jam, for filling — 2 tbsp

Method

  1. Preheat the oven to 180°C (350°F) and grease a round cake tin.
  2. Whisk the eggs and sugar together until pale, thick and tripled in volume, about 5–7 minutes.
  3. Gently fold in the flour and baking powder, keeping as much air in the batter as possible.
  4. Pour into the prepared tin and bake for 25–30 minutes until a skewer comes out clean.
  5. Cool completely, then slice horizontally into two or three layers.
  6. Spread jam and a layer of whipped cream between the sponge layers, along with some of the berries.
  7. Cover the entire cake with the remaining whipped cream.
  8. Decorate the top with strawberries and blueberries, arranging them to evoke the red, white and blue of the Norwegian flag.
