Ingredients

  • 600 g (1.3 lb) potatoes, boiled and mashed
  • 200 g (1.6 cups) plain flour
  • 1 egg
  • 100 g (3.5 oz) potato starch or semolina
  • 1 tsp salt
  • Pinch of ground nutmeg

Method

  1. Let the mashed potato cool completely, then mix in the egg, salt and nutmeg.
  2. Gradually work in the flour and potato starch until a soft, workable dough forms — avoid overworking it.
  3. Shape the dough into two or three log shapes, roughly 5 cm (2 inches) in diameter.
  4. Lower the logs gently into a large pot of gently simmering (not boiling) salted water.
  5. Cook for 20-25 minutes, turning once halfway through, until they float and feel firm to the touch.
  6. Remove, pierce with a fork to release steam, then slice with thread before serving.
