Method

  4. Cook over low heat, stirring continuously, for 8-10 minutes until the mixture thickens enough to coat the back of a spoon; do not let it boil.
  5. Remove from heat, stir in the vanilla and rum, if using, then strain through a fine sieve into a bottle or jug to remove any small curds.
  6. Chill thoroughly, at least 4 hours, before serving in small glasses dusted with nutmeg.
