Ingredients

  • - plain flour: 350 g (2 3/4 cups)
  • - desiccated coconut: 50 g (2/3 cup)
  • - granulated sugar: 50 g (1/4 cup)
  • - coconut milk, warm: 200 ml (3/4 cup + 1 tbsp)
  • - instant yeast: 1 1/2 tsp (1 1/2 tsp)
  • - salt: 1/2 tsp (1/2 tsp)
  • - vegetable oil, for cooking: 3 tbsp (3 tbsp)

Method

  1. Mix the flour, coconut, sugar, yeast and salt in a bowl, then stir in the warm coconut milk to form a soft dough.
  2. Knead for 8 minutes until smooth, then cover and let rise in a warm place for 1 hour, or until doubled.
  3. Divide the dough into 6 pieces and roll each into a 15cm (6in) round.
  4. Heat a griddle or non-stick pan over medium heat and brush lightly with oil.
  5. Cook each flatbread for 2-3 minutes per side until golden brown spots appear and it puffs slightly.
  6. Stack under a clean cloth to keep soft and warm while cooking the rest.
