Method

  1. Chop the jellied stock into small cubes and mix into the minced pork along with the Shaoxing wine, soy sauce, ginger, sugar and salt. Chill the filling for 30 minutes.
  2. Make the dough by combining flour and warm water into a smooth, firm dough; rest for 20 minutes.
  3. Roll the dough into a long log and cut into small pieces, then roll each piece into a thin round wrapper, slightly thicker in the centre.
  4. Place a spoonful of chilled filling in the centre of each wrapper, then pleat the edges upward and twist to seal into a small purse shape.
  5. Arrange the dumplings in a lined bamboo steamer, leaving space between each, and steam over boiling water for 8-10 minutes.
  6. Serve immediately with black vinegar and shredded ginger for dipping.
