Ingredients
- - 800 g (1.75 lb) goat meat, cut into chunks
- - 2 tbsp lime juice

- - 150 g (1/2 cup plus 2 tbsp) natural peanut butter
- - 300 ml (1.25 cups) water
- - 1 onion, finely chopped

Method
- Marinate the goat meat in lime juice, half the garlic, half the ginger and the salt for at least 1 hour, or overnight in the refrigerator.
- Thread the marinated meat onto skewers or place directly on a grill rack.
- Grill over medium-high heat for 15-18 minutes, turning occasionally, until charred outside and cooked through.
- Meanwhile, make the sauce: whisk the peanut butter into the water until smooth in a saucepan.
- Add the onion, tomato, remaining garlic, remaining ginger and chilli powder, and simmer over low heat for 12-15 minutes, stirring occasionally, until thickened.
