Ingredients

- - 800 ml (3 1/3 cups) water or vegetable stock
- - 1 onion, chopped
- - 2 tomatoes, chopped
- - 2 tbsp vegetable oil
- - 1 tsp salt
- - 1/2 tsp ground black pepper
Method
- Heat the oil in a large saucepan and sauté the onion until translucent, about 5 minutes.
- Add the tomatoes and cook for 5 minutes until softened.
- Whisk the peanut butter into 250 ml (1 cup) of the water or stock until smooth, then pour into the pan.
- Add the remaining water or stock, salt and pepper, and bring to a gentle simmer.
- Add the greens and simmer uncovered for 15-20 minutes, stirring occasionally, until the greens are tender and the soup has thickened.
- Adjust seasoning to taste and serve hot on its own or alongside ubugali.
