Cultural Background: Sarmi are pickled cabbage or grape leaves rolled around a rice and minced meat filling, slow-simmered until tender. A staple of Bulgarian family lunches and essential to festive tables, especially in winter.
Tips: Trim thick leaf stems so rolls stay compact. Simmer low and slow; boiling too hard breaks the rolls apart.
Variations: Postni sarmi (meatless, for fasting) use rice, carrots and mushrooms instead of meat. Grape-leaf version (Bulgarian dolma-style) is lighter and slightly tangier. A meatless (postni) version exists using rice, carrot and mushroom filling for fasting periods.
Storage: Refrigerate in their cooking liquid for up to 4 days.
