Ingredients
- - 400g (3 cups) flour
- - 2 eggs
- - 50g (1/4 cup) butter, melted
- - 50g (1/4 cup) sugar
- - 1 tsp baking powder
- - 1/2 tsp salt
- - 100ml (1/3 cup plus 1 tbsp) warm milk
- - Vegetable oil for frying
- - Extra sugar for dusting
Method
- Combine flour, baking powder, salt and sugar in a bowl.
- Add eggs, melted butter and warm milk, mixing to a smooth, firm dough.
- Knead briefly, then rest the dough for 15 minutes.
- Roll the dough thin and cut into diamond or rectangular shapes, scoring a small slit in the centre of each if desired.
- Fry in hot oil at 170°C (340°F) for 1-2 minutes per side until golden and crisp.
- Drain on paper towels and dust generously with sugar while still warm.
