Ingredients
- - 300g (2 cups) chuño (freeze-dried potato), soaked overnight and peeled
- - 1 onion, finely chopped
- - 2 eggs, beaten
- - 2 tbsp vegetable oil or butter
- - 50g (1/3 cup) queso fresco, crumbled
- - Salt and pepper to taste
Method
- After soaking and peeling, cut the chuño into small pieces.
- Heat oil in a frying pan and sauté the onion until soft and translucent.
- Add the chuño pieces and fry, stirring occasionally, for 8-10 minutes until lightly browned.
- Pour the beaten egg over the chuño and stir gently until just set.
