Ingredients

  • - 700 g Chicken, cut into pieces
  • - 3 medium Tomatoes, chopped
  • - 1 large Onion, sliced
  • - 3 whole Garlic cloves, minced
  • - 1 tbsp Fresh ginger, grated
  • - 3 whole Green chilies, sliced
  • - 1 tsp Ground coriander
  • - 2 tbsp Vegetable oil
  • - 200 ml Water (3/4 cup)
  • - 1 tsp Salt (to taste)
  • - 2 tbsp Fresh coriander leaves, chopped (for garnish)

Method

  1. Heat the oil in a pot and sauté the onion until golden.
  2. Add the garlic and ginger, and cook for 1 minute until fragrant.
  3. Add the chicken pieces and sear on all sides for 5 minutes.
  4. Add the tomatoes, chilies and ground coriander, and cook for 5 minutes until the tomatoes break down.
  5. Pour in the water, cover, and simmer for 25–30 minutes until the chicken is cooked through and tender.
  6. Uncover and simmer for a further 5 minutes to thicken the sauce.
  7. Season with salt, garnish with fresh coriander, and serve hot with red rice.
