Ingredients
- - 1kg (2 lb) potatoes, peeled and cubed
- - 3 large eggs
- - 1 carrot, diced small
- - 100g (1 cup) frozen peas
- - 1 small onion, finely diced
- - 1 celery stalk, finely diced
- - 180ml (3/4 cup) mayonnaise
- - 1 tbsp yellow mustard
- - 1 tbsp white vinegar
- - 1/4 tsp finely minced scotch bonnet pepper (optional)
- - Salt and black pepper, to taste
- - Sweet pickle relish, 2 tbsp (optional)
Method
- Boil the potatoes and carrot together in salted water for 12-15 minutes until just tender. Drain and cool.
- Separately, hard-boil the eggs: cover with cold water, bring to a boil, then simmer for 9 minutes. Cool, peel, and dice.
- Blanch the peas in boiling water for 1 minute, then drain and cool.
- In a large bowl, combine the cooled potatoes, carrot, peas, diced eggs, onion and celery.
- In a small bowl, whisk together the mayonnaise, mustard, vinegar and scotch bonnet if using.
- Fold the dressing gently through the salad until evenly coated. Season with salt and pepper, and stir in the relish if using.
- Chill for at least 1 hour before serving to let the flavours meld.
