Bajan Callaloo Soup

Ingredients
- - 500 g (1 lb) callaloo leaves (or substitute with spinach), chopped
- - 150 g (5 oz) okra, sliced
- - 1 onion, chopped
- - 2 cloves garlic, minced
- - 1 hot pepper, whole (left uncut for mild heat)
- - 400 ml (1 3/4 cups) coconut milk
- - 750 ml (3 cups) vegetable or fish stock
- - 150 g (5 oz) pumpkin, diced
- - 1 tbsp butter
- - 1 tsp fresh thyme
- - Salt and black pepper, to taste
Method
- Melt the butter in a large pot over medium heat and sauté the onion and garlic until softened, about 4 minutes.
- Add the callaloo leaves, okra, pumpkin and thyme, and stir for 2 minutes.
- Pour in the stock and coconut milk, add the whole hot pepper, and bring to a simmer.
- Cook uncovered for 25-30 minutes, until the vegetables are very soft. Remove the whole pepper before blending.
- Blend the soup until smooth using an immersion blender, or in batches in a stand blender.
- Season with salt and black pepper, then return to a gentle simmer before serving.
