Ingredients
- - 400 g (2 cups) basmati rice, rinsed and soaked 20 minutes
- - 2 tbsp vegetable oil or ghee
- - 1 dried black lime (loomi), pierced
- - 1 cinnamon stick
- - 2 green cardamom pods, lightly crushed
- - 600 ml (2 1/2 cups) water
- - 1 tsp salt, or to taste
Method
- Heat the oil or ghee in a saucepan over medium heat and briefly fry the dried lime, cinnamon stick and cardamom pods for 1 minute until fragrant.
- Add the drained rice and stir gently to coat the grains in the oil for 1-2 minutes.
- Pour in the water and salt, bring to a boil, then reduce heat to very low, cover tightly and cook for 15-18 minutes.
- Remove from heat and let the rice rest, covered, for 5 minutes before fluffing gently with a fork.
- Remove the whole spices before serving, or leave them in for presentation if preferred.
