Ingredients
- - 500 g (1.1 lb) lamb or beef, cubed
- - 2 tbsp vegetable oil

- - 1/2 tsp ground turmeric
- - 2 tomatoes, chopped

- - 1 potato, cubed
- - 1 carrot, sliced
- - 1 courgette (zucchini), sliced
- - 100 g (3.5 oz) green beans, trimmed
- - 800 ml (3 1/3 cups) water or stock
- - 1 1/2 tsp salt, or to taste
- - 1/2 tsp black pepper
- - Fresh coriander, chopped, for garnish
Method
- Heat the oil in a large pot and brown the meat cubes on all sides.
- Add the onion and cook until softened, then stir in the garlic, baharat and turmeric for 1 minute.
- Add the tomatoes and tomato paste, stirring for 2-3 minutes until they break down slightly.
- Pour in the water or stock, season with salt and pepper, cover and simmer for 45 minutes until the meat is tender.
- Add the potato and carrot, simmer for 10 minutes, then add the courgette and green beans and cook for a further 10-12 minutes until all vegetables are tender.
- Adjust seasoning to taste and garnish with fresh coriander before serving hot over rice.
