Ingredients
- - 400 g (2 cups) long-grain white rice, rinsed
- - 3 tbsp red palm oil
- - 1 small onion, finely chopped
- - 2 garlic cloves, minced
- - 750 ml (3 cups) water or chicken stock
- - 1 bay leaf
- - Salt, to taste
Method
- Heat the palm oil in a medium saucepan over medium heat and sauté the onion and garlic until softened and fragrant, about 4 minutes.
- Add the rinsed rice and stir to coat evenly in the oil, toasting lightly for 1-2 minutes.
- Add the water or stock, bay leaf and salt, and bring to a boil.
- Reduce heat to low, cover tightly, and simmer for 16-18 minutes until the rice is tender and the liquid is absorbed.
- Remove from heat and let stand, covered, for 5 minutes.
- Fluff with a fork, remove the bay leaf, and serve hot.
