- - Zest of 1 lime
Method
- Crack the eggs into a blender and blend on low speed for 1 minute until well combined.
- Add the condensed milk, evaporated milk, rum, vanilla extract, nutmeg, cinnamon and lime zest to the blender.
- Blend on medium speed for 2–3 minutes until smooth and well combined.
- Strain the mixture through a fine mesh strainer into a jug to remove any bits of egg membrane or zest, for a silky-smooth finish.
- Pour into clean glass bottles with tight-fitting lids.
