Ingredients

  • - 1 litre (4 cups) water
  • - 200 g (7 oz) okra, sliced
  • - 1 tsp (1 tsp) salt
  • - 300 g (2 cups) fine cornmeal
  • - 2 tbsp (2 tbsp) butter

Method

  1. Bring the water to a boil in a large non-stick pot. Add the sliced okra and salt, and boil for 5 minutes until the okra softens and releases its natural mucilage .
  2. Mix the cornmeal with a small amount of cold water in a separate bowl to form a smooth, lump-free paste.
  3. Reduce the heat under the pot to low. Gradually stir the cornmeal paste into the okra water, stirring constantly to avoid lumps.
  4. Cover and cook for 5 minutes on low heat, then uncover and continue stirring vigorously for 10–12 minutes, until the mixture becomes very thick and pulls away from the sides of the pot.
  5. Stir in the butter until fully incorporated and glossy.
  6. Wet your hands or a large spoon with water and shape the fungee into a smooth mound or individual portions on a plate.
  7. Serve immediately, alongside pepperpot or saltfish.
