Ingredients

  • - 400 g (14 oz) conch meat, tenderised and finely chopped
  • - 200 g (1 2/3 cups) all-purpose flour
  • - 1 tsp (1 tsp) baking powder
  • - 1 large egg
  • - 150 ml (2/3 cup) milk
  • - 1 small onion, finely diced
  • - 1 small sweet pepper, finely diced
  • - 1/2 scotch bonnet pepper, finely minced (seeds removed for less heat)
  • - 2 cloves garlic, minced
  • - 1 tbsp (1 tbsp) fresh thyme leaves
  • - Salt and black pepper, to taste
  • - Vegetable oil, for deep frying
  • - 1 lime, cut into wedges, to serve

Method

  1. Tenderise the conch meat by pounding it gently with a mallet, then chop it finely.
  2. In a large bowl, whisk together flour, baking powder, egg and milk to form a thick batter.
  3. Fold in the chopped conch, onion, sweet pepper, scotch bonnet, garlic and thyme . Season with salt and black pepper.
  4. Heat oil in a deep pot to 180C (350F).
  5. Drop tablespoon-sized portions of the batter into the hot oil, frying in batches for 3-4 minutes until deep golden and cooked through.
  6. Drain on paper towels and serve hot with lime wedges.
