- - 80 g (1/3 cup) butter, melted

Method

- In a separate bowl, whisk the eggs, coconut milk, melted butter and vanilla extract together.
- Pour the wet ingredients into the dry ingredients and fold gently until just combined; do not overmix.
- Pour the batter into the prepared loaf tin and smooth the top.
- Bake for 50-55 minutes until a skewer inserted into the centre comes out clean and the top is golden brown.
- Cool in the tin for 10 minutes, then transfer to a wire rack to cool completely before slicing.
