Ingredients
- - All-purpose flour — 400g (3 1/4 cups)
- - Eggs — 6 (6)
- - Milk — 600ml (2 1/2 cups)
- - Water — 400ml (1 3/4 cups)
- - Sour cream — 200g (3/4 cup plus 1 tbsp)
- - Butter, melted — 150g (2/3 cup)
- - Salt — 6g (1 tsp)
Method
- Whisk together flour, eggs, milk, water, sour cream and salt until you have a thin, smooth batter.
- Preheat oven to 200°C (400°F) and brush a deep round pan generously with melted butter.
- Pour a thin layer of batter into the pan and bake for 5-7 minutes until just set.
- Brush the baked layer with melted butter, then pour another thin layer of batter over it and bake again.
- Repeat this process, layer by layer, for about 12-15 layers, brushing with butter between each.
- For the final layer, bake a little longer until deep golden on top.
- Rest for 15 minutes before slicing into wedges to reveal the layered rings inside.
Introduction: A striking dish of dozens of thin, crepe-like layers poured and baked one at a time, creating a rich, custardy, ringed pastry reserved for special occasions.
Cultural Background: Fli is one of northern Albania’s most celebrated dishes, traditionally prepared for weddings and major family celebrations, historically baked over an open hearth using a special curved lid called a saç.
Tips: Keep each layer thin — this is what creates the dish’s distinctive ringed cross-section. Work in a warm kitchen, as the batter can thicken if left to sit too long between layers.
Variations: Some regions add a touch of sugar to the batter for a slightly sweeter fli. A version with added cream between layers produces an even richer texture.
Vegetarian/Vegan: Naturally vegetarian; not easily adapted to vegan given the central role of eggs, milk and butter.
Serving Suggestions: Serve warm, cut into wedges, as the centrepiece of a celebration table.
Storage: Refrigerate for up to 2 days; best enjoyed fresh the day it’s made.
Reheating: Reheat gently in a low oven, covered, to avoid drying out the layers.
