Introduction: A dense, slightly crumbly cornbread with a golden crust, traditionally baked to accompany hearty stews and beans.
Cultural Background: Bukë Misri has long been a staple in rural Albanian households, historically more accessible than wheat bread and closely tied to the country’s mountain and farming communities.
Tips: Don’t overmix the batter — a few lumps are fine and keep the texture tender. Let the cornbread cool slightly before slicing to help it hold together.
Variations: Add crumbled feta into the batter for a savoury twist. Stir in chopped fresh dill for extra flavour.
Vegetarian/Vegan: Naturally vegetarian; not easily adapted to vegan due to the eggs and yogurt in the batter.
Serving Suggestions: Serve warm alongside Jani me Fasule or any hearty stew.
Storage: Store at room temperature in an airtight container for up to 2 days.
Reheating: Warm briefly in the oven or toaster; avoid microwaving as it can turn gummy.
