Ingredients
- - Dried white beans, soaked overnight — 300g (1 1/2 cups)
- - Onion, chopped — 150g (1 medium)
- - Carrot, diced — 100g (1 medium)
- - Tomato paste — 30g (2 tbsp)
- - Paprika — 5g (1 tsp)
- - Vegetable oil — 45ml (3 tbsp)
- - Bay leaf — 1 (1)
- - Water — 1.2L (5 cups)
- - Salt — 6g (1 tsp)
Method
- Drain the soaked beans and place in a large pot with fresh water; bring to a boil and simmer for 10 minutes, then drain again.
- In the same pot, heat oil and sauté onion and carrot until softened.
- Stir in tomato paste and paprika and cook for 1 minute.
- Return the beans to the pot, add water, bay leaf and salt.
- Simmer covered for 45-50 minutes until the beans are tender and the stew has thickened.
- Remove the bay leaf before serving.
