Ingredients
- - Vermicelli noodles, broken — 150g (5 oz)
- - Whole milk — 1L (4 cups)
- - Sugar — 100g (1/2 cup)
- - Dates, pitted and chopped — 80g (1/2 cup)
- - Ghee or butter — 30g (2 tbsp)
- - Ground cardamom — 2g (1/4 tsp)
- - Slivered almonds and pistachios — 30g (1/4 cup)
Method
- Melt the ghee in a saucepan and lightly toast the vermicelli until golden, about 2-3 minutes.
- Add the milk and bring to a gentle simmer.
- Cook for 12-15 minutes, stirring occasionally, until the vermicelli is soft and the mixture has thickened slightly.
- Stir in the sugar, chopped dates and cardamom, and simmer for a further 5 minutes.
- Remove from heat and top with slivered almonds and pistachios.
- Serve warm or chilled.
