Ingredients

  • Tamarind paste — 80 g (1/4 cup + 2 tbsp)
  • Jaggery or brown sugar — 100 g (1/2 cup)
  • Water — 250 ml (1 cup)
  • Ground cumin, roasted — 5 g (1.5 tsp)
  • Ground ginger — 3 g (1 tsp)
  • Red chile powder — 2 g (1/2 tsp)
  • Black salt (kala namak) — 3 g (1/2 tsp)

Method

  1. Combine tamarind paste and water in a saucepan; simmer 10 minutes, mashing to dissolve.
  2. Strain through a fine sieve, pressing to extract liquid; discard fibrous solids.
  3. Return strained liquid to the pan; add jaggery, roasted cumin, ginger, chile powder and black salt.
  4. Simmer 15-20 minutes, stirring occasionally, until thickened to a syrupy consistency.
  5. Cool before serving; the chutney thickens further as it cools.
