Ingredients
- Fermented black beans (douchi), rinsed — 60 g (1/3 cup)
- Garlic cloves, minced — 4
- Fresh ginger, minced — 10 g (1 tbsp)
- Shaoxing wine — 30 ml (2 tbsp)
- Soy sauce — 15 ml (1 tbsp)
- Sugar — 5 g (1 tsp)
- Vegetable oil — 30 ml (2 tbsp)
- Cornstarch slurry — 10 g (1 tbsp) mixed with water
- Chicken or vegetable stock — 100 ml (1/3 cup + 1 tbsp)
Method
- Rinse fermented black beans briefly, then roughly mash with the back of a knife or in a small bowl.
- Heat oil in a wok over medium heat; add garlic and ginger, stir-fry until fragrant, about 30 seconds.
- Add mashed black beans, stir-fry 1 minute.
- Add Shaoxing wine, soy sauce, sugar and stock; bring to a simmer.
- Stir in cornstarch slurry, simmer 2-3 minutes until thickened and glossy.
