Ingredients

  • whole garam masala spices (cinnamon, cloves, green and black cardamom, bay leaf) plus a heavier proportion of star anise, mace, and shahi jeera (black cumin) than standard garam masala, often including dried rose petals in premium formulations

Method

  1. Toast whole spices, cool, grind; some versions are used whole rather than ground, layered directly into the rice during the dum (steam-sealed) cooking process.
  2. Standard toast-then-grind, or used whole depending on the specific regional style.

Origin: Pan-Indian, with strong regional variants (Hyderabadi, Lucknowi/Awadhi, Kolkata, and others).

Use: Layered into the rice and meat during biryani’s characteristic layered, sealed-pot cooking method.

Classic Dishes: Biryani (all major regional styles).

Storage: Ground version keeps 2-3 months sealed and dark; whole spice mix keeps well over a year.

Variations: Hyderabadi biryani masala tends toward a hotter, more chile-forward profile; Lucknowi/Awadhi versions are more delicately spiced and aromatic.

Substitutions: Pre-made commercial garam masala varies enormously in quality; a fresh, home-toasted-and-ground version is markedly more aromatic than most shelf products. Garam masala plus extra star anise and black cumin/shahi jeera.
