  • Cooked short-grain rice, slightly cooled — 200 g (7.1 oz)
  • Salt — 1/2 tsp
  • Soy sauce — 3 tbsp
  • Water — 1 tbsp

Method

  1. Mash the cooked rice with the salt until it forms a cohesive, slightly sticky mass.
  2. Press the mixture thinly onto a lightly oiled baking tray, or shape into thin discs by hand.
  3. Let dry slightly for 20-30 minutes.
  4. Grill or bake at a moderate heat (around 180°C) for 10-12 minutes, until firm and beginning to crisp, flipping once.
  5. Combine the soy sauce and water and brush over the crackers.
  6. Return to the heat briefly to dry and lightly char the glaze before serving.
