Ingredients

  • Fresh purslane leaves and tender stems, washed and roughly chopped — 400 g (about 6 cups)
  • Red lentils, rinsed — 150 g (3/4 cup)
  • Tomatoes, chopped — 2
  • Onion, chopped — 1
  • Garlic cloves, minced — 2
  • Tomato paste — 2 tbsp (30 ml)
  • Vegetable oil — 3 tbsp (45 ml)
  • Water or stock — 750 ml (3 cups)
  • Salt, or to taste — 1 tsp (5 ml)
  • Ground coriander — 1/2 tsp (2.5 ml)

Method

  1. Heat the oil in a saucepan over medium heat and sauté the onion until soft, about 5 minutes.
  2. Add the garlic and tomato paste and cook for 2 minutes, stirring, until darkened slightly.
  3. Add the chopped tomatoes and cook for 5 minutes until pulpy.
  4. Stir in the rinsed lentils, water or stock, salt and ground coriander, and bring to a boil.
  5. Reduce heat, cover, and simmer for 15-18 minutes until the lentils are tender.
  6. Stir in the purslane and simmer uncovered for a further 8-10 minutes until wilted and the stew has thickened.
  7. Serve hot with kisra or rice.
