- Dried yellow split peas, soaked overnight — 400 g (2 cups)
- Smoked pork knuckle or bacon — 400 g (14 oz)
- Large Onion, diced — 1
- Water — 1.5 L (6 cups)
- Fresh thyme — 2 sprigs
- Bay leaf — 1
- Ground allspice — 0.5 tsp
- Salt and pepper — to taste
- Mustard, to serve
Method
- Drain the soaked peas and rinse well.
- Place peas, pork, onion, water, thyme, bay leaf and allspice in a large pot.
- Bring to a boil, skimming any foam that rises.
- Reduce heat and simmer gently, partially covered, for 50–60 minutes until the peas are soft and the pork is tender.
- Remove the pork, shred or dice the meat, and return it to the pot.
- Discard the thyme sprigs and bay leaf, season with salt and pepper.
- Serve hot with a spoonful of mustard on the side.
