Ingredients

  • All-purpose flour — 500 g (4 cups)
  • Granulated sugar — 100 g (1/2 cup)
  • Active dry yeast — 2 tbsp
  • Fine salt — 1 tsp
  • Warm water — 150 ml (2/3 cup)
  • Coconut milk — 150 ml (2/3 cup)
  • Melted butter — 60 g (1/4 cup)
  • Shredded coconut — 150 g (1 1/2 cups)

Method

  1. Dissolve the yeast in the warm water with a pinch of the sugar and leave for 10 minutes until frothy.
  2. In a large bowl, mix the flour, remaining sugar and salt.
  3. Add the yeast mixture, coconut milk and melted butter, and mix to a soft dough.
  4. Knead for 8-10 minutes until smooth and elastic, then fold in the shredded coconut.
  5. Cover and leave to rise in a warm place for about 2 hours, until doubled in size.
  6. Knock back the dough gently, shape into a loaf, and place in a greased loaf tin. Cover and prove for a further 30-40 minutes.
  7. Bake at 180°C (350°F) for 30-35 minutes, until deep golden and hollow-sounding when tapped. Cool on a wire rack before slicing.
