Method
- Mix the flour, arrowroot starch, baking powder and salt in a bowl.
- Gradually add the coconut milk and coconut oil, mixing to form a soft, slightly sticky dough, adding a little more coconut milk if needed.
- Cover and rest for 20 minutes.
- Divide the dough into 6 pieces and roll each into a thin round, about 15 cm (6 in) across.
- Heat a lightly oiled non-stick skillet over medium heat and cook each flatbread for 2–3 minutes per side, until lightly golden with brown spots and cooked through.
- Serve warm.
