The Quirky Foodster Team

Ingredients
- Dried corn kernels, or fresh/frozen corn — 300 g (1¾ cups)
- Mung beans, soaked 2 hours — 150 g (¾ cup)
- Pumpkin, peeled and cubed — 400 g (14 oz)
- Onion, chopped — 1
- Garlic, minced — 3 cloves
- Vegetable oil — 30 ml (2 tbsp)
- Water — 1.2 L (5 cups)
- Salt, — to taste
- Fresh scallion, chopped, for garnish — 2 tbsp
Method
- If using dried corn, soak overnight, then drain. If using fresh or frozen corn, no soaking is needed.
- Drain the soaked mung beans and set aside.
- Heat oil in a large pot over medium heat. Sauté onion and garlic until soft and fragrant, about 4 minutes.
- Add the corn and mung beans, along with the water. Bring to a boil, then reduce heat and simmer, partially covered, for 35–40 minutes until the corn and beans begin to soften.
- Add the pumpkin cubes and continue simmering for 20–25 minutes more until the pumpkin is tender and the stew has thickened slightly, with the mung beans fully cooked.
- Season with salt to taste.
- Ladle into bowls, garnish with fresh scallion, and serve warm as a hearty lunch, alone or alongside grilled fish or meat.
